Spinach and Bacon Quiche

Geoff loves to make quiches.  Many times, he will make one on Sunday and then have a slice each morning for breakfast.  This is his favorite recipe. 

6 large eggs, beaten

1 1/2 cups heavy cream

2 cups chopped fresh baby spinach, packed

salt and pepper

8 slices bacon, cooked and crumbled

1 1/2 cups shredded Swiss Cheese

1 cup sharp cheddar cheese divided

1 (9 inch) refrigerated pie crust, fitted to a 9-inch pie plate

Preheat oven to 375

Combine the eggs, cream, salt, and pepper in a bowl and mix well with a whisk.  Layer the spinach, bacon, swiss cheese, and 1/2 cup cheddar cheese in the bottom of the pie crust, then pour the egg mixture on top.  Garnish the top with the remaining 1/2 cup cheddar cheese.  Bake 35-45 minutes until the egg mixture is set.  Cut into 8 wedges.
