Easy Chicken Salad

2 1/2 cups Chicken Breast (finely chopped and chilled)

1 cup Mayo

1 cup celery, chopped

1 cup sliced grapes

2 apples, peeled, cored and finely diced

1/2 cup toasted pecans or walnuts (I just swish them around in some butter in a hot skillet for a minute or so)

1/4 cup sugar (optional)

1 tsp salt

Juice from 1/2 a lemon

Mix all ingredients together and chill.  Great on lettuce, crackers, or as a sandwich

Apple, Cheese and Walnut Salad

Quick, easy, and delicious.  Enough said!

8 cups torn, mixed salad greens

2 medium pink lady apples, halved, cored, and sliced very thin

Vinaigrette dressing (see recipe below)

1/3 cup crumbled blue cheese

1/4 cup coarsely chopped, toasted, walnuts

Dressing:

3 Tbs olive oil

2 tbs balsamic vinegar

2 tsp digon mustard

1 clove garlic, crushed

Whisk all dressing ingredients together

In a large bowl, combine salad greens and apple slices.  Andd vinaigrette to salad; toss gently to coat.  Arrange salad on large platter, sprinkle with cheese and walnuts

Not Your Everyday Spinach Salad

Stop whatever you are doing and drive immediately to your nearest grocery store to buy the ingredients for this salad!  This bowl of deliciousness will having you ignoring all the other items on your dinner menu and fighting your fellow table mates for the last drop of this salad.  This recipe was given to me by my dear friend, Donna Mitchell.  I work with Donna at Canyon High School.  Every month, the math department has a birthday luncheon for our fellow math teachers.  Donna brought this to our January luncheon and it was love at first bite.

This salad is filled with more super foods than a Dr. Oz cookbook.  Walnuts, blueberries, strawberries, spinach, goat cheese and a dressing that had me eating it by the spoonful before I had a chance to apply it to the salad.

Note:  This salad serves 4.  If you are only serving two, save 1/2 the dressing and other ingredients for another meal. 

Salad Ingredients:

1 6 oz package of fresh baby spinach

1/2 cup chopped toasted walnuts.  (you could also use pecans or almonds)

1/2 pint blueberries

1/2 pint strawberries (sliced)

2 oz of fresh crumbled goat cheese (could use feta)

Dressing ingredients

1/3 cup olive oil

1/3 cup balsamic vinegar (Donna uses balsamic infused with pomegranate but all I had was regular balsamic)

1 Tbs sour cream

1 tsp dijon mustard

3 Tbs sugar (I tried this with 1 Tbs so that it was South Beach friendly and it tasted fine, but 3 was better if sugar is not an issue for you!)

Directions:

1.  In a bowl, combine the spinach, nuts, blueberries, strawberries and cheese.

2.  In another bowl, combine all the dressing ingredients and whisk together.

3.  Drizzle dressing over salad and toss to coat;

4.  Serve immediately because it will wilt fast!
